Armatore Colatura di Alici is a delicious preparation that comes from a centuries-old tradition. Caught during spring by the fishing boats of Cetara in the Amalfi Coast, the anchovies are processed just a few hours after being caught. Arranged in layers inside a chestnut barrel, alternating with layers of sea salt, this maturation process can take between 18 to 30 months.
Anchovies extract reserve has a shelf life of 24 months from the moment it is bottled. Once opened, keep in the fridge. A great condiment to any seafood pasta recipe, soups, fried fish.
